Since Berkey relies on gravity, Backflushing with gravity should be possible. Fixtures would have to be fabricated to reverse the flow. I just use a toothbrush to clean the filters. Letting them dry first makes it easier.

The one thing I know for sure about Berkey filters is, Berkey suggests, when filling the water tank - make sure to completely cover the filters with water. This allows the most use from each filter.
